Buy a food processor. Don't skimp. Get at least a 7-cup. Preferably this one.

Then make this:

Roast five red bell peppers on the grill until they're pretty charred. Pull the skins off and remove the stems and seeds. Throw the peppers in the food processor with a clove of garlic or two, a teaspoon of caraway, a teaspoon of cumin, some salt and some crushed red chili (start with 1/2 a tsp each, and add more to taste). Pulse it into a mash, then hold the button down on the food processor and add about a cup of decent grocery store olive oil very slowly so it emulsifies.

It's called harissa. It's worth buying a food processor just to make this.

Serve with toasty pitas and grilled kefta kebab.
